Carrot & Collagen Soup
đĽIngredients:
- 1 Tbsp of olive oil
- 1 large onion, chopped
- 2 Tbsp of ginger powderÂ
- 2 cloves of garlic, chopped
- 1kg of carrots, chopped
- 2 tsps of ground turmeric
- 1 tsp of chilli flakes
- 1 Tbsp of curry powderÂ
- 1 litre of vegetable stock
- 200ml of coconut creamÂ
- 2 scoops of BodyGOLD collagen

đĽMethod:
- In a pan, heat up some olive oil, add the chopped onion and cook for a few minutes until the onions are soft.
- Add in the ginger, garlic, carrots, turmeric, chilli flakes, curry powder and vegetable stock and simmer for 15-20 minutes until the carrots are soft.
- Add in the coconut cream and BodyGOLD collagen, then blend the soup until completely smooth.
- Serve topped with pumpkin seeds and chilli flakes.
