Winter Warmer - Glowing Carrot & Collagen Soup

Carrot & Collagen Soup

🥕Ingredients:

  • 1 Tbsp of olive oil
  • 1 large onion, chopped
  • 2 Tbsp of ginger powder 
  • 2 cloves of garlic, chopped
  • 1kg of carrots, chopped
  • 2 tsps of ground turmeric
  • 1 tsp of chilli flakes
  • 1 Tbsp of curry powder 
  • 1 litre of vegetable stock
  • 200ml of coconut cream 
  • 2 scoops of BodyGOLD collagen


🥕Toppings:

  • Pumpkin seeds 
  • Chilli flakes

 

🥕Method:

  1. In a pan, heat up some olive oil, add the chopped onion and cook for a few minutes until the onions are soft.
  2. Add in the ginger, garlic, carrots, turmeric, chilli flakes, curry powder and vegetable stock and simmer for 15-20 minutes until the carrots are soft.
  3. Add in the coconut cream and BodyGOLD collagen, then blend the soup until completely smooth.
  4. Serve topped with pumpkin seeds and chilli flakes.
