Ingredient notes:
Vanilla Extract
Both artificial and natural vanilla extracts will work here. Natural vanilla extract, especially in no-bake recipes leads to a richer flavour. That said, either option will do the trick!
Almond Butter
Almond butter is a great choice thanks to its rich, nutty flavour and wholesome texture. If you prefer something milder and slightly sweeter, cashew butter is a perfect substitute with a more subtle taste. We don’t recommend using peanut butter, as its strong flavour can overpower the delicate birthday cake “flavour”.
Oat Flour
You can use either oat flour or almond flour here. Oat flour is super affordable and easy to make at home, just blitz some rolled oats in a high-speed blender. If you go with almond flour, you may need to use a bit more, as it’s lighter and less dense than oat flour.
Tip for gluten-free eaters: Make sure your oats are certified gluten-free or stick with almond flour.
Sprinkles
Any kind of sprinkle will work, but we recommend using vermicelli sprinkles as they hold their colour better and won’t bleed into the dough.
Honey
Honey gives the best sweetness and consistency in this recipe. Maple syrup works as an alternative, but the flavour will be slightly less sweet. If you’re after that classic birthday cake sweetness, honey is your best bet!

- ½ cup almond butter
- 3 Tbsp honey (or maple syrup)
- 1 tsp vanilla extract

- ¼ cup oat flour (or finely ground oats)
- 2 Tbsp rainbow sprinkles
Method
Combine all ingredients in a large mixing bowl until a thick, cake-batter-like dough forms. Portion the mixture into 2 Tbsp balls using your hands, rolling gently to smooth. Chill on a plate or baking tray for 30 minutes, this helps them firm up. Enjoy immediately, or store in the fridge (up to a week) for an easy grab-and-go treat.
